Grilled Zucchini Roll Ups
From A Healthy Passion

3 small zucchini cut into 1/4 inch thick slices (lengthwise)
1 T olive oil
2 oz herbed goat cheese
2 T flat leaf parsley, minced
1 tsp fresh lemon juice
lemon zest
2 cups baby spinach
1/2 cup fresh basil
black pepper
sea salt

Preheat grill or grill pan over medium heat. Brush zucchini with olive oil and sprinkle with salt and pepper. Grill 4-5 minutes per side until soft. In a bowl combine goat cheese, lemon, and parsley. Spread a small amount (1 tsp) of mixture on the end of each zucchini strip. Top with spinach and one basil leaf and roll up. Place seam side down on platter and serve!
