Braised Hakauri Turnips with Lemon and Herbes de Provence

1 bunch Hakauri turnips (about 1 lb)
Juice from one lemon
1/2 cup extra virgin olive oil
3 cloves of garlic, smashed lightly with your knife and peeled
1 tsp salt
1/2 tsp white pepper
1/2 tsp herbes de provence

Preheat the oven to 375 degrees F. Wash the turnips and trim their greens. (Save the greens--you can use the them for something else.) Place the turnips in a baking dish and combine with the remaining ingredients. Mix until the turnips are evenly coated. There should be about a 1/2 inch of oil/lemon juice combo.

Cover the dish and cook in the oven for about 40 minutes or until the turnips are fork tender.




White Hakurei Turnip Gratin
Adapted from GF-Zing!

1 T butter
1 bunch Haurei turnips, greens and "tails" removed, sliced into 1/4-inch rounds
1 tsp dried thyme
3/4 tsp salt
1/4 tsp pepper
1/8-1/4 tsp cayenne pepper
1/2 cup heavy cream
1/2 cup chicken stock
1/2 cup freshly grated Parmesan cheese

Heat the butter in a cast iron skillet or another heavy-bottomed pan. Add the turnips and cook, stirring occasionally for 3-5 minutes. Add the thyme, salt, pepper and cayenne and stir well. Add the half & half and chicken stock and cook, covered, for about 20 minutes at a low simmer. Uncover the pan and sprinkle with cheese. Cook another 5 minutes until liquid is almost absorbed and the cheese is melted.




Turnip Casserole

4 medium turnips, peeled and cubed
1 cup waterd
1 egg, beatend
1/3 cup sugard
3 T butterd
1/2 t saltd
1/4 t ground cinnamond

Place turnips in a large saucepan and cover with water. Bring to a boil. Reduce heat, cover and cook for 15 minutes or until tender, and drain.

Transfer turnips to a bowl and mash. Add the egg, sugar, butter and salt; mix well. Transfer to a greased 1-qt. baking dish; sprinkle with cinnamon. Cover and bake at 350 degrees for 20 - 25 minutes or until a thermometer reads 160 degrees F and turnip mixture is heated through.



Sliced Turnip and Bacon Bake

3 lbs turnips, sliced
1/3 cup butter
1 T fresh thyme
3.5 oz cheddar cheese
1 large onion, sliced
6 slices bacon

Preheat oven to 350 degrees F.

Heat half the butter in an ovenproof frying pan. Add bacon and cook for a few minutes the add thyme and onions and cook 8-10 minutes. Scoop onion mixture out of the pan and leave the grease. Off the heat, layer sliced turnips and a scattering of the onion mixture along with some cheese and some butter pats. Add salt and pepper. Layer this sequence once more and top with a layer of turnips. Cover with foil and bake 1 1/4 to 1 1/2 hrs or until turnips are soft.
