Spinach Pesto Spread
From Fake Food Free
5 oz spinach leaves, about 3 big handfuls
2 cloves garlic
¼ cup chopped walnuts
3 tbsp parmesan cheese, grated
Olive oil
Salt and pepper to taste
In a food processor combine the spinach, garlic, walnuts and cheese. Pulse until you create everything is finely chopped and begins to create a paste. Turn on low and slowly drizzle in olive oil. I don’t measure the olive oil, I just add until it reaches the consistency I desire. Add less if you want a thick spread, more if you want a dip or dressing. Remove the lid of the food processor. Sprinkle in about a ¼ tsp of salt and pepper, or more or less to taste. Serve immediately or refrigerate until ready to use.
Use as a spread or to dip vegetables in.
Saag Paneer (Indian Spinach and Cheese)
2 heaping tbsp almonds
¼ tsp coriander seed, whole
1 tbsp cumin seed, whole
1 tbsp fresh ginger
1-2 hot peppers (to taste)
1 tomato (optional)
Water (See note)
1 lb fresh spinach (or other green--see notes)
1 Tbl ghee or vegetable oil
10 fresh curry leaves or bay leaves
Fried paneer (to taste), shredded mozzarella or cubed firm tofu (see notes)
Salt, to taste
Combine the almonds, coriander seed and cumin seed in a strong blender and blend to a powder. Add the ginger, peppers, tomato and a little water (if needed to help in grinding) to make a paste. Add the spinach and blend, adding water if necessary, until smooth.
Heat the ghee or oil in frying pan, and add the curry leaves. Once the leaves start to sizzle, add the spinach puree and cook on medium-high until desired thickness. Add cubes of fried paneer and heat until warm. Add salt to taste.
Notes:
**Any greens - including wilted and/or yellowing broccoli, collards, bok choy (really whatever you have on hand) - will work just fine!
**Paneer is available in the freezer section of decent Indian/International groceries such as Parisa’s in Lexington. If you can't find paneer, you can add some shredded mozzarella or even cubes of firm tofu.
**In place of the water used to help the grinding, you can use whey.
